Although indigenous to North America, Greeks, Romans, and travelers from Asia Minor brought the raspberry to the rest of the world. Today, the U.S. produces more than 70 million pounds per year with the Pacific Northwest producing the most. Raspberries were cultivated by George Washington on Mount Vernon, but it wasn’t until the 19th century that production took off throughout the country with more than 40 different varieties. Like other berries, the raspberry has been used for dyes and inks, and is most often eaten fresh or juiced, in jams and preserves, and baked goods from tarts to popovers.
